INGREDIENTS - Meatballs

1 lb of R-C Ranch Ground Beef 80/20

1 pound of Italian Sausage (if there's casing, remove it)

1/2 small Onion, minced

1/2 cup Panko Breadcrumbs

1/4 cup Whole Milk

1 large Egg

1/4 cup Freshly Grated Parmesan

1/4 cup Chopped Fresh Parsley

2 Garlic Cloves, minced

2 Tbl Chopped Fresh Basil

Kosher Salt to taste

Black Pepper to taste

DIRECTIONS

STEP 1

Preheat oven to 400 Degrees

STEP 2

In a large bowl, combine ground beef, Italian sausage, onion, panko breadcrumbs, milk, egg, Parmesan, parsley, garlic and basil; season with 1 teaspoon salt and 1/2 teaspoon pepper.

STEP 3

Stir this mixture until well combined. Roll the mixture into 1-to-1-1/4-inch meatballs, forming about 30 meatballs. They should be the size of a ping pong ball.

STEP 4

Place meatballs in a single layer onto the prepared baking sheet with parchment paper and bake until cooked through, about 18-20 minutes.

STEP 5

Once the meatballs are done, set them aside.

STEP 6

Melt the butter in a large cast iron skillet over medium heat. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes.

STEP 7

Stir in garlic until fragrant, about 1 minute.

STEP 8

Stir in wine, scraping any browned bits from the bottom of the pot.

STEP 9

Stir in tomatoes and Italian seasoning

STEP 10

Now season the sauce with salt and pepper, to taste.

STEP 11

Bring the sauce to a boil; reduce heat and simmer until flavors have blended. This should take about 10 minutes.

STEP 12

Stir in meatballs until heated through and evenly coated in sauce, about 3-5 minutes.

STEP 13

Serve immediately. No one likes cold meatballs. ;)
